November’s Mouth-Friendly Recipe 2013

Cauliflower Mashed Potatoes Ingredients:

  • 1 head of cauliflower
  • 1 clove of garlic
  • 1 white leek, split into four pieces
  • 1 tablespoon soft-tub margarine, non-hydrogenated
  • Pepper to taste

Directions: Break the cauliflower into small pieces. In a saucepan, steam cauliflower, garlic and the leek in water until they are completely tender. This should take about 20 to 30 minutes. While the vegetables are still hot, puree until they resemble mashed potatoes. (Use a food processor or if you prefer a smoother texture, use a blender.) If the vegetables seem dry, add a little hot water. Add margarine and pepper to taste, and then serve! This is a simple side dish that will help make your Thanksgiving meal delicious and nutritious.
