Spinach and Strawberry Salad
Ingredients:
Dressing:
- 1 cup strawberries, divided
- 2 tablespoons white wine vinegar
- 2 tablespoons finely chopped basil leaves
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon sugar substitute
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Salad:
- 5 ounces baby spinach, washed
- ¼ cup goat cheese, crumbled
- ¼ cup walnuts
Directions:
In a food processor, combine ¾ cup strawberries, vinegar, basil, olive oil, sugar substitute, salt and pepper and puree until smooth. Toss the spinach, cheese, walnuts and remaining ¼ cup strawberries in a large bowl and lightly drizzle with the dressing.
