March’s Mouth-Friendly Recipe 2018

Rainbow Salsa

Ingredients:

  • 3 tomatoes, diced
  • 1 jalapeno pepper, diced and seeded
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 large yellow bell pepper, diced
  • 1 15-ounce can whole kernel corn, drained
  • 2/3 cup chopped red onion
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup fresh cilantro
  • 2 tablespoons lime juice
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon salt

Directions:

Combine all of the veggies, beans and cilantro in a bowl. In a separate bowl, whisk together the lime juice, garlic powder, cumin and salt. Add the juice mixture to the veggie mixture and toss until well combined.
