Watermelon-Blueberry Ice Pops


  • 4 cups chopped, seedless watermelon
  • 2 tablespoons lime juice
  • 1 cup fresh blueberries
  • Sugar substitute to taste


Puree the watermelon, lime juice and sugar substitute in a blender until smooth. Divide the blueberries among freezer pop molds or 5-oz. paper cups. Top with the watermelon mixture and insert craft sticks. Freeze for six hours or until firm. To remove the pops from the molds, briefly run them under warm water. Makes approximately six 5-oz. pops.
